Watermelon or Cantaloupe Sorbet

Ingredients
175 ml granulated sugar 3/4 cup
250 ml water 1 cup
750 ml ripe cantaloupe, diced or watermelon, seeded, diced 3 cups
60 ml fresh lime juice 1/4 cup
Directions

Place sugar and water in a small saucepan and bring to a boil over high heat. Reduce heat and simmer gently for 10 minutes. Remove from heat and let cool slightly.

Meanwhile, in blender, puree diced fruit. Add the sugar syrup to the fruit and stir to combine. Stir in the lime juice.

Pour into an 8x11" (20 x 27.5 cm) baking dish or similar sized container and place on a flat surface in the freezer. Every 30 minutes, take the sorbet out of the freezer and whisk to blend, removing any lumps. Repeat until mixture is frozen and smooth. Store in a covered container in the freezer until ready to use.

Cooking Tip

To make creamsicles, use a popsicle form and fill half way with cantaloupe sorbet, pressing it in firmly. Fill the remaining half with vanilla ice cream. You'll need 1 litre of ice cream. Insert a stick and freeze until firm.
