This could be the easiest ever lunch prep!! Simply layer your favourites salad ingredients and enjoy.

Salad in a Jar

1st Layer: Any dressing of your choice, or a combination of olive oil and balsamic vinegar
2nd Layer: Protein like beans, lentils, hard boiled egg or shredded chicken
3rd Layer: Grain like cooked quinoa, barley or rice
4th Layer: 1 handful chopped veggies such as carrots, red peppers, zucchini, celery, corn, cherry tomatoes
5th Layer: Optional - a sprinkle of cheese
6th Layer: 1 handful greens
Directions
- Chop (or buy pre-chopped) veggies, and cook any protein or grains.
- Follow layering instructions in each jar that are listed under ingredients.
- When ready to eat, shake up the jar, open and pour into a bowl or plate, and enjoy.
- Stow closed jars in the fridge until ready to eat.
Tip: Pre-prepare 3-4 salads in jars at once to have quick lunches to grab through your week
