Spaghetti alla Chitarra (key-tarr-ah) originates from the Abruzzo region of Eastern Italy, it is famous for being the first home made pasta not to be cut by hand. Near the end of the 1800s, The device La Chitarra" was created; a simple wooden frame with wires tightly drawn across it. Sheets of pasta would be placed on top and pressed through the wires with a rolling pin, thus cutting a whole sheet of pasta in seconds. Our Spaghetti alla Chitarra keeps the square cut shape carried on from the tradition of wire cutting.
