Ingredients
4 pieces of corn, shucked and grilled
1/4 cup walnuts, toasted & crushed
1 cup cilantro, chopped
1/2 cup pickled onions
1/4 cup parmesan, grated
Juice of 1/2 lime
1 tbsp olive oil
Sea salt & black pepper
Directions
  1. Cut the corn kernels off the cob using a knife and place them into a large bowl.

     

  2. Then add walnuts, cilantro, pickled onions, parmesan, lime juice and olive oil.

     

  3. Season with sea salt and pepper and stir to combine.
