


Strawberry & Blueberry Bacon Crunch Summer Salad

1.First, cook your bacon until slightly crispy
2.Set bacon aside to cool
3.Once cool, cut or crumble bacon into small bits
4.In a small jar or bowl, combine vinegar, lemon juice, honey, Dijon, garlic, olive oil, salt and pepper. Whisk until combined. Set aside.
5.In a large bowl, combine arugula, strawberries, blueberries, avocado, pistachios and cooled bacon bits.
6.Mix together.
7.Pour dressing over salad and sprinkle with crumbled goat cheese and additional pistachios.
