Ingredients
⅓ cup finely chopped fresh cilantro
⅓ cup chopped fresh flat-leaf parsley
3 cloves of garlic
½ cup olive oil or any other neutral oil
2 fresno chili peppers - diced
½ poblano pepper (can also use roasted red peppers for a roasted taste) – diced
2 teaspoons chili flakes
½ teaspoons dried oregano
¼ cup red wine vinegar
Kosher salt and pepper to taste
2-3 pcs. fresh cod fillets
2- tablespoons tablespoons Neutral oil
2 teaspoons kosher salt
Directions
  1. In a small blender or mortar and pestle, add all chimichurri ingredients and blend/crush to your desired texture. Add salt and pepper to taste.
  2. Turn grill to medium high and place a cast iron or stainless-steel skillet on top of grill. 
  3. Once hot, add neutral (high smoke point) oil. Add fillets and reduce heat to medium. There should be enough oil to cover the bottom of the pan and oil should not splatter.
  4. Cook for approximately 5 minutes (side flush to pan should appear golden brown). Flip fish and cook an additional 30 seconds. 
  5. Remove from heat and serve hot with spicy chimichurri sauce.
