Ingredients
2 tbsp Extra virgin olive oil
4 boneless, skinless chicken breasts
Sea Salt to taste
Fresh Cracked black pepper to taste
2 Bell Peppers
2 large carrots, chopped
2 cloves minced garlic
1 tbsp minced ginger
1/2 cup Peanut Butter
1/4 cup soy sauce
Juice of 1 lime
1 cup chicken broth
1/3 cup peanuts
Cilantro for garnish
Directions

Place skillet over medium heat, heat oil season chicken with S&P ,sauté till golden and no longer pink (Approx.8 Minutes a side)

Transfer to a plate and add the bell peppers and carrot to the skillet and cook until soft, add ginger and garlic. Cook for 1 minute.

In a bowl -whisk peanut butter, soy sauce and lime juice

Add this and chicken broth to skillet bring to a simmer, return chicken to skillet add peanuts and simmer for 3-5 minutes

Before serving garnish with cilantro.
