Blueberry Energy Bars Recipe

Ingredients
1 1/2 cup rolled oats
1/2 cup rice crisps
4 tbsp cornmeal
2 tbsp ground flaxseed
1/4 tsp baking soda
Pinch of salt
3 tbsp western family honey
3 tbsp coconut oil
1 tsp vanilla
1/2 cup blueberry jam
1/4 cup western family greek yogurt
1 tbsp western family honey
1 tsp vanilla
3/4 cup powdered sugar
Directions
  1. Preheat oven to 350 F. Line a square pan with parchment paper.
  2. In a bowl, mix the oats, rice crisps, cornmeal, flax, salt and baking soda.
  3. In a small pot on medium heat, melt together the honey and coconut oil. Remove from heat and stir in vanilla. Pour over oats and mix well.
  4. Place the granola mixture into the squared pan and use the back of a cup to press firmly into the mixture - pack it tight!
  5. Bake for 15 mins then spread the jam over top. Bake for another 10 mins. Allow it to cool completely before you remove it from the pan and cut into bars.
  6. To make the glaze, warm the yogurt, honey and vanilla. Whisk in the powdered sugar.
  7. Dip or drizzle each bar into the glaze and let it dry for at least 1 hour. Store in an air-tight container and enjoy!
