Directions
  1. Prepare Honey Butter Mixture: In a small pan, mix together ¼ cup honey, and ¼ cup of melted butter. Set aside.
  2. Prep Veggies: Cube the 2 yellow flesh potatoes, 2 red potatoes, carrots, and tri-color peppers (1 of each colour). Feel free to cube more and freeze for later! This makes a really easy and healthy side dish.
  3. Season Salmon and Veggies: Season the salmon fillets with salt and pepper, then coat them in the honey butter mixture.
  4. Season the cubed potatoes and veggies with 1 tablespoon of olive oil, salt and pepper.
  5. Prepare Air Fryer: Line the air fryer basket with foil. Place a bed of cubed potatoes, peppers, and carrots in the basket.
  6. Air Fry Veggies: Cook the veggies in the air fryer at 375°F (190°C) for 20 minutes, tossing halfway through to ensure even cooking.
  7. Add Salmon: After 20 minutes, remove veggies and add the seasoned salmon fillets to the air fryer basket. Cook for an additional 5-8 minutes, depending on the thickness of the salmon fillets.
  8. Caramelize Apples and Pears: While the salmon and veggies are cooking, prepare the caramelized apples and pears. In a separate pan, melt 4 tablespoons of butter and brown sugar. Add chopped onions, pears, and apples. Cook until golden.
  9. Serve: Once everything is cooked, serve the honey butter salmon on a bed of crispy potatoes and roasted veggies. Top each serving with the caramelized apples and pears and chopped green onion.
