Ingredients
2 boneless ribeye or sirloin steaks (about 8 oz each)
Salt and freshly ground black pepper, to taste
1 tablespoon olive oil
1 teaspoon minced garlic (optional)
4 slices of your favorite bread (sourdough, ciabatta, or baguette work well)
1 cup arugula leaves, washed and dried
1 cup roasted red pepper strips (you can use jarred or roast your own)
1/2 red onion, thinly sliced
4 slices provolone or mozzarella cheese
2 tablespoons balsamic glaze (optional)
Directions
  1. Preheat your grill or stovetop grill pan over medium-high heat.
  2. Pat the steaks dry with paper towels and season generously with salt and black pepper on both sides.
  3. Drizzle olive oil over the steaks and rub in the minced garlic, if using. This adds extra flavor to the steak.
  4. Place the steaks on the grill and cook to your desired level of doneness. For medium-rare, cook for about 3-4 minutes per side. Adjust the time based on your preference and the thickness of the steaks. Once cooked, remove the steaks from the grill and let them rest for a few minutes before slicing.
  5. While the steaks are resting, prepare the other sandwich components. Toast the slices of bread if desired.
  6. Assemble the sandwiches: Place a layer of arugula on two slices of bread. Top with slices of grilled steak.
  7. Add a layer of roasted red pepper strips on top of the steak.
  8. Place the sliced red onion on top of the peppers.
  9. Add two slices of cheese on each sandwich.
  10. Drizzle balsamic glaze over the cheese if using. This adds a tangy sweetness to the sandwich.
  11. Top with the remaining slices of bread to complete the sandwiches.
  12. If desired, you can place the sandwiches back on the grill or in a pan for a minute or two to melt the cheese and warm the sandwich through.
  13. Slice the sandwiches in half diagonally and serve warm.
