Ingredients
For the protein
6 Chicken Souvlaki Kebabs – From Urban Fare or Save-On-Foods
2 tablespoons of neutral oil (avocado/canola/grapeseed)
For the Salsa
1 cup of diced tomatoes
1 cup of diced cucumber
1 medium jalapeno – minced
½ medium red onion – diced
½ lemon – juiced
1 clove garlic – minced
2 tablespoons of freshly chopped mint
2 tablespoons of freshly chopped basil
Salt and pepper to taste
For the Crema
¾ cup of Greek yogurt
1 clove of garlic – minced
½ large lemon – juiced
4-5 small to medium flour tortillas
½ tablespoon of freshly chopped mint
½ tablespoon of freshly chopped basil
Salt and pepper to taste
Feta to top
Directions

For the Salsa

Combine all the ingredient mentioned in a bowl. Mix well and season with salt and pepper. Cover and place in fridge until ready to use.

For the Crema

Combine all ingredients mentioned in a small bowl. Mix well and season to taste. Cover and place in fridge until ready to use.

For the Kebabs

Place a skillet/cast iron on medium high heat. Once hot, add oil - ensuring it coats the bottom of the pan. Add kebabs into the pan allowing enough space in between. Sear and rotate after a few minutes and once the chicken releases from the bottom of the pan. Continue until chicken is cooked through. Remove from heat.

To Serve

Place a dollop (or two) of crema in the middle of a tortilla. Add Chicken souvlaki (with stick removed) and top with cucumber tomato salsa. Garnish with crumbled feta and enjoy!
