Coconut oil & honey roasted sweet potatoes

Ingredients
CILANTRO GARLIC DRESSING INGREDIENTS:
2 cups fresh cilantro (approx. 1 bunch)
1 to 2 garlic cloves
Juice of 1 lemon
2 tsp. honey or maple syrup
1/2 tsp. sea salt
1/2 cup olive oil
1/2 an avocado
SWEET POTATO INGREDIENTS:
3 to 4 medium sweet potatoes (or yams)
3 tbsp. coconut oil
3 tbsp. honey or maple syrup
1/2 tsp. sea salt
Directions
CILANTRO GARLIC DRESSING INSTRUCTIONS:
- In a high-speed blender or food processor, add all ingredients and pulse to combine.
- Add olive oil or a splash of water for desired consistency.
- Process until smooth and set aside.
SWEET POTATO INSTRUCTIONS:
- Preheat the oven to 425 degrees Fahrenheit and line a large, rimmed baking sheet with parchment paper.
- Scrub your sweet potatoes clean and pat dry, or peel them.
- Cut into wedges, approximately the same size for similar cooking time.
- In a microwave-safe bowl, melt the coconut oil and honey.
- Place sweet potatoes in a large bowl and toss in the oil and honey mixture.
- Place on the baking sheet and sprinkle with salt.
- Arrange in a single layer, careful not to overcrowd the pan, and bake for 30 to 40 minutes until tender and caramelizing at the edges. Turn halfway.
- Drizzle on your dressing and enjoy!
