750 g boneless chicken
30 ml peanut oil 2 tbsp
10 ml finely chopped fresh ginger 2 tsp
4 cloves garlic
15 ml grated lemon peel 1tbsp
15 ml grated orange peel 1tbsp
125 ml Western Family lemon juice 1/ 2 cup
125 ml Western Family orange juice 1/ 2 cup
30 ml sugar 2 tbsp
30 ml soy sauce 2 tbsp
25 ml cornstarch, mixed with 1tbsp
15 ml sesame oil 1tbsp
30 ml thinly sliced green onions 2 tbsp (garnish)
1L water 4 cups
Directions

In a medium saucepan heat water until boiling; immerse chicken pieces for 2 minutes; remove chicken and keep warm.

Heat oil in wok over medium heat. Add ginger and garlic; stirfry 30 seconds.

Add remaining sauce ingredients; bring to a boil; simmer for 1-2 minutes or until thickened.

Add chicken pieces; cook 3 more minutes or until chicken is cooked through.

Sprinkle with green onions and serve at once.
