Summertime Tomato Basil Lasagna

6-8 Western Family lasagna noodles
15 ml Western Family canola oil 1 tbsp
1 package extra firm tofu (300 g)
salt and pepper
500 ml fresh BC Hot House® tomatoes, diced 2 cups
500 ml Western Family tomato sauce 2 cups
125 ml fresh basil, chopped 1/2 cup
1 small zucchini, cut into long, thin strips
250 ml freshly grated Parmesan cheese 1 cup
  1. Cook lasagna noodles according to package instructions. Set aside.
  2. In large saucepan, heat oil over medium heat. Crumble in tofu to resemble ground beef. Cook until lightly browned, approximately 8 minutes. Season with salt and pepper.
  3. Add tomatoes, tomato sauce and basil to tofu and stir to combine. Remove from heat.
  4. Coat bottom of casserole dish with 1 to 2 tablespoons of the tomato mixture. Cover with 1 layer of lasagna noodles.
  5. Top with 1/3 of the tomato-tofu mixture. Cover with 1 layer of zucchini strips. Sprinkle with half of the Parmesan cheese. Cover with 1/3 of the tofu mixture. Cover with 1 layer of lasagna noodles. Top with remaining tofu mixture and sprinkle on the remaining cheese.
  6. Bake at 180 C (350 F) for 30 minutes.
