Pesto for Pasta, Chicken or Fish

ingredients
250 ml packed basil leaves 1 cup
250 ml packed basil leaves 1 cup
75 ml Western Family 1/ 3 cup
60 ml Western Classics 1/ 4 cup
4 garlic cloves
salt and pepper, to taste
directions
- Combine all ingredients in a food processor or blender.
- Process until well-combined and thick.
- Refrigerate. Use for pizza, sandwiches, pasta or meat dishes.
- Commercial pesto is, unfortunately, rather high in fat-although it is "good fat"(of vegetable origin and largely monounsaturated.) Remember, when making pesto all you need is enough oil to puree the basil leaves with the cheese and nuts.
