Ginger Pork Stirfry

5 ml sesame oil (optional) 1tsp
500 g pork tenderloin, cut julienne 1lb
10 ml finely grated gingerroot 2 tsp
1 garlic clove, minced
1mL dried crushed chilies 1/4 tsp
2 medium carrots, thinly sliced
1 small onion, cut in wedges
1L bok choy, cut in 12 mm (1/2 in) slices 4 cups
5 ml sesame seeds 1tsp
60 ml granulated sugar 1/4 cup
15 ml Western Family cornstarch 1tbsp
60 ml water 1/4 cup
30 ml red wine vinegar 2 tbsp
30 ml Western Family lemon juice 2 tbsp
15 ml Western Family low sodium soy sauce 1tbsp
  1. Combine last 6 ingredients for the sauce in a small dish and set aside.
  2. Spray a non-stick wok or frying pan with cooking spray. Heat on medium-high until very hot.
  3. Add sesame oil, pork, ginger, garlic and chilies. Stir-fry for about 5 minutes until beginning to brown.
  4. Add carrot, onion and bok choy. Stir fry for about 8 minutes.
  5. Push pork mixture up side of wok, making a well in the center. Stir the sauce and pour into the well. Cook for about 2 minutes until boiling and thickened.
  6. Sprinkle with sesame seeds.
