SANTA FE GRILLED CHICKEN BREAST WITH AN EXOTIC MUSHROOM, SAGE, CREAM SAUCE
Ingredients
4 chicken breast
80 gr. Dried exotic mushrooms
Sea salt/ fresh cracked pepper
1 bunch fresh sage, chopped
100ml whipping cream
50 ml white wine
½ onion, sliced
50 ml. Chicken stock
1 lime, juiced
25 ml. Extra virgin olive oil
5 ml. Garlic, minced
5 ml. Sambel olek
5 ml. Paprika
Method
- Soak mushrooms in warm water for 30 minutes. (make sure mushrooms are covered with enough water).
- Marinate chicken breast for at least 1 hour; in a deep dish, season with sea salt, pepper, sambel, olive oil, garlic, paprika, and lime juice, blend well.
- Once marinate is complete preheat bbq., season (oil).
- Place the chicken breasts onto the grill. Cook each side for approx. 4-5 minutes each depending on the size of the breasts.
- Meanwhile prepare the sauce; heat a sauce pan, add olive oil (1-2 tbsp.). Add onions, season, and sear for 2 minutes, add white wine, reduce for 2 minutes . Add 50 ml of mushroom stock, 50 ml of chicken stock and reduce on high heat for 3 minutes.
- Add cream, adjust seasoning, and reduce for 4 minutes
- Add sage just before the chicken breast is ready, place sauce over the chicken breast.
