Grilled fresh halibut in a light cream, wild mushroom ragout
Ingredients
4 halibut filets
150ml whipping cream
75 gr dried wild mushrooms
extra virgin olive oil
30 ml butter
salt/fresh cracked pepper
50ml white wine
30 ml onion, minced
2 cloves garlic, minced
Method
- Preheat bbq and season
- In a bowl place halibut, season and drizzle olive oil, toss, put aside,refridgerate.
- In a bowl add hot water and place mushrooms in and let soak for 20 minutes.
- Add oil to sauce pan, add onions,season and sear,add garlic.
- Add white wine and reduce
_Add strained mushrooms, season and saute for 2 minutes
- Add cream and reduce for 4-5 minutes, adjust seasoning if needed, wisk in butter add the end.put aside.
- Place filets onto grill and grill each side for approx. 4 minutes
- Place halibut onto a plate and spoon the wild mushroom ragout over top.
