Drunken Vodka Strawberries and Fresh Mango Slices over Chocolate Sponge Cake, topped with a Vanilla Bean Gelato

Ingredients

11/2 pint strawberries
1-2 mango, cubed or sliced
1 tbsp. Pure vanilla extract
1/ 6 inch sponge cake, cut in pie shape
50 ml dark brown sugar
½ lemon, juiced
½ lime, juiced
light vanilla ice cream
Mint leaves for garnish
100 ml whipped cream
200 ml vodka


Method

  • Wash the strawberries and slice
  • Place the all the ingredients in a bowl with the exception of the sponge cake, mint, and ice cream.
  • Blend gently and place in the fridge for at least 3 hours, turning every once and a while (it is best overnight).
  • Slice the pie shaped sponge in half. Place the bottom of the slice on the bottom of the plate or bowl.
  • Place a good portion of the fruit over the slice. Top with the top slice of the sponge.
  • Place of scoop of ice-cream on the side or over top. Spoon some of the remaining juice around the plate or bowl.
  • Add a dollop of whipped cream to the dessert (you can season the whipped cream with a little icing sugar if so desired).
  • Garnish with a fresh mint leaf.
  • Serves 4- 6/ carb count 11 g. per serving.
