Bbq jamaican jerk halibut with exotic fruit salsa and blackbeans
Ingredients
2 halibut filets
50ml.red onion,chopped fine
25 ml. Fresh thyme
5-15 ml sambel olek
5 ml allspice
5ml ground cinnamon
Salt/fresh cracked pepper
25ml fresh basil
5 ml ground nutmeg
75ml extra virgin olive oil
2 cloves garlic, minced
Salsa
75 ml mango, diced
75 ml papaya, diced
25ml cilantro, chopped
salt/fresh cracked pepper
125ml blackbeans (canned,drained)
25ml ginger, chopped
15ml lemon juice
15ml lime juice
Method
- season halibut, both sides with salt/ pepper
- place ingredients in cuisinart, purree
- marinate halibut in fridge for 30 minutes, reserve some mixture for basting
- prepare salsa, put ingredients in bowl and mix
- preheat bbq, season bbq by lightly coating with oil
- place halibut on grill, approx. 4-5 minute each side
- brush excess jerk sauce over
- plate and top with salsa
