FRESH OYSTERS ON THE HALF SHELL, AU NATURAL WITH
A RED WINE VINEGAR, MINCED SHALLOTS AND FRESH
HERBS
Ingredients

fresh oysters, half shell
50 ml red wine vinegar
3 shallots, minced
red chilli flakes
lemon wedges
sea salt/ fresh cracked pepper
1 tbsp. Flat leaf parsley, chopped
crushed ice
Method
- Prepare the vinegar; in a small bowl place vinegar, salt, pepper, chillies, parsley, and shallots. Whisk. Put aside.
- Set 2 plates; place crushed ice on the plates.
- Place 6 half shelled oysters on the ice.
- Place the vinegar in small ramekins and in the centre of the plate.
- Serve with lemon wedge
- Serves 2
