FRESH OYSTERS ON THE HALF SHELL, AU NATURAL WITH A RED WINE VINEGAR, MINCED SHALLOTS AND FRESH HERBS

Ingredients

12 fresh oysters, half shell
50 ml red wine vinegar
3 shallots, minced
red chilli flakes
lemon wedges
sea salt/ fresh cracked pepper
1 tbsp. Flat leaf parsley, chopped
crushed ice


Method

  • Prepare the vinegar; in a small bowl place vinegar, salt, pepper, chillies, parsley, and shallots. Whisk. Put aside.
  • Set 2 plates; place crushed ice on the plates.
  • Place 6 half shelled oysters on the ice.
  • Place the vinegar in small ramekins and in the centre of the plate.
  • Serve with lemon wedge
  • Serves 2
